2025 Gundog Estate Hilltops Riesling

We treated the fruit in much the same way as our other Rieslings; only taking the first 500 litres per ton of free-run juice, which we then fined and racked clean, prior to fermentation with a neutral yeast (DV10). Despite taking a similar winemaking approach, the resulting 2025 Hilltops Riesling is a departure in style relative to our previous incarnations from the Canberra District, and we are particularly pleased with the outcome.

Medium bodied, this vibrant young Riesling offers a wide array of citrus led aromas and flavours. The palate is generous, yet focussed, with a fine line of natural acidity delivering great length of flavour and promising a bright future. Drink now or after 3 to 5 years of careful cellaring.
