Gundog Estate Wine Range
Gundog Estate is the heart of our wine story: a range dedicated to crafting expressive, regionally distinct wines from some of New South Wales’ most compelling growing regions. From our home in the Hunter Valley to the high-country vineyards of Hilltops and the cool, continental slopes of the Canberra District, our work is shaped by a simple yet powerful philosophy — that great wine should speak clearly of variety, place and season.
The Gundog Estate range brings together the styles that have defined our reputation: Hunter Valley Semillon, Shiraz from the Hunter, Hilltops and Canberra District, Riesling from the Canberra region, and a small collection of carefully made wines that reflect our broader regional interests. These are wines grounded in winemaking tradition, but made with a contemporary sensibility: bright, pure, detailed, balanced, food-friendly and built around drinkability as much as distinction.
At the centre of the range sit two of Australia’s great wine styles: Hunter Valley Semillon and cool-climate Shiraz. Semillon, in particular, is one of the Hunter’s most remarkable contributions to the world of wine. In youth, it can be delicate, citrus-fresh; with time, it develops layers of toast, honey, lanolin and complexity while often retaining astonishing freshness. Our approach is to preserve that line of energy and purity, allowing the vineyard and season to carry the wine without unnecessary intervention.
Within this story, our Wild Semillon has become one of the defining wines of Gundog Estate. First made as a creative departure from the region’s classic style, it takes Hunter Valley Semillon into more textural and expressive territory while remaining true to the variety’s natural brightness. Wild fermentation, careful handling and a subtle touch of residual sweetness combine to create a wine of citrus lift, savoury complexity and gentle generosity. It is distinctive: a wine that appeals to seasoned Semillon drinkers, but also opens the door for a wider audience to discover why this variety — and this region — are so compelling.
Shiraz, meanwhile, allows us to explore the extraordinary diversity of New South Wales terroir. Hunter Valley Shiraz offers medium-bodied savoury charm, spice, earth and soft, supple structure. Hilltops brings depth, colour, dark fruit and a firmer structural frame. Canberra District Shiraz tends toward perfume, fine tannin, cool spice and elegant intensity. Rather than forcing these regions into one house mould, the Gundog Estate range celebrates their differences.
Our winemaking philosophy is one of care and attentiveness. The aim is not to impose a heavy signature, but to guide each parcel from vineyard to bottle with clarity and respect. We work with trusted growers, familiar sites and varieties we believe in deeply. In the winery, decisions are made wine by wine, vintage by vintage: picking dates, fermentation choices, oak use, maturation time and blending are all considered in relation to the fruit in front of us.
This balance between consistency and sensitivity is central to the Gundog Estate identity. We want our wines to be reliable in quality, but never generic. Each release should feel connected to the broader quality house style while still carrying the fingerprint of its vineyard, region and season. The best examples are approachable on release, yet possess enough structure and integrity to reward careful cellaring.
Gundog Estate is also inseparable from our broader values as a business. We believe wine should connect people to place, season, craft and community. We also believe the pleasure of wine should sit comfortably alongside responsibility — to our growers, our customers, our team, our regions and the environment. Sustainability, careful resource use, long-term relationships and positive community action are not separate from the wines; sustainability is central to the way we operate.
For many people, Gundog Estate is the first point of contact with our world. It is the range poured most often at our cellar doors, shared at the table, discovered through our wine club and returned to year after year. These wines are made to be enjoyed, understood and revisited — as part of the rhythm of good meals, good company and a deeper appreciation of place.
