      Our approach to the Poacher’s Semillon in the winery is all about quality; hand picking, early free-run juice cuts at the press, double racking and fining of juice, and a cool fermentation. After ferment, the component wines are racked off gross lees, and then spend another four months in tank, cloudy. Further fining is minimal in style, prior to bottling in June.

      The 2014 Poacher’s Semillon is produced from fruit grown in two vineyards in the heart of Pokolbin; Somerset and Tinklers.
